Air Fryer Rainbow Quesadillas

Super fun to make, kids love this tasty snack on the go. It's a great way to use up leftovers in the fridge to reduce your food waste.

Air Fryer Rainbow Quesadillas

Ingredients

4 tortilla wraps

3-4 tbsp mayonnaise

70g leftover ham or 4 slices of sliced ham

½ red and orange pepper, finely chopped

1 spring onion, finely sliced

SuperValu Green Pesto (190 g)

SuperValu Grated Mozzarella Cheese (200 g)

Directions

Spread 1 teaspoon of mayonnaise on each wrap.
Cover the tortilla wraps in tin foil. Air fry at 180 degrees for 5 minutes.
Remove foil and air fry for an additional 2 minutes to crisp the tortillas.
Sprinkle each wrap with ham, then add the peppers and spring onion.
Cut tortillas into 4 squares.
Add 1 teaspoon of red or green pesto to each wrap.
Then add around 70g of grated cheese, spread across each wrap.
Enjoy!

Sustainable Tip: Use up any leftovers you have in your fridge as a filling. Tortillas freeze great, if you want to reuse those leftovers on another day!
